Chocolate Moist Cake

Ingredients A:

- 250 gm Hershey's semi-sweet chocolate (break into fine pieces)
- 125 gm unsalted butter
- 1 cup of hot boiling water


Ingredients B:

- 2 cups of sugar
- 2 eggs
- 2 tbsp vanilla extracts


Ingredients C: (sift together)

- 2 cups of plain flour
- 1/2 cup of Hershey's cocoa powder
- 2 tsp baking powder
- 1/2 tsp salt


Method:

1- Preheat oven to 170 - 180 degree celcius


2- Melt chocolate (using double-boil method), then add butter. Finally pour in hot water and stir/combine well. Leave aside

3- Whisk together sugar, egg and vanilla extract in a big bowl. No need to use hand-mixer =)

4- To whisked ingredients B, add ingredients C. Stir/combine well with a wooden spoon.

5- Finally add the chocolate mixture (Ingredients A).

6- Pour on to a greased baking tray or muffin cups. Bake for 30-60 minutes (depends on your baking molds)

7- Leave to cool before adding the ganache


Ganache:

- 250 gm Cadbury's 'Milk Chocolate' Cooking Chocolate
- 180 mL heavy cream
- 2-3 tbsp butter

Method: Heat the heavy cream until it boils. (Do not over-boil!). Melt chocolate (double-boil method), add in cream and stir the mixture well. Finally stir in butter.

Carrot cake

Here's another favourite cake recipe of mine. Selamat mencuba !!!!

Ingredients:

(A)

  • 335 gm plain flour
  • 1 tsp baking soda
  • 1 tsp fine salt
  • 1 tsp cinnamon powder
  • 1 tsp baking powder
(B)
  • 300 gm grated carrots
  • 200 gm canned pineapples, drained and chopped finely
  • 50 gm raisins
  • 300 gm walnuts, coarsely chopped
  • 40 gm cornflakes, finely ground
  • 220 ml cooking oil
  • 220 gm castor sugar
  • 4 eggs
  • 1 tsp vanilla essence
Preparations:
  1. Sift together ingredients A and stir in cornflakes; set aside
  2. Beat sugar and oil until well mixed, add eggs one at a time. Stir in essence
  3. Fold in ingredients A and stir ingredients B. Spread mixture into lightly greased and lined prepared tin
  4. Bake in preheated 175 C oven.
  5. Cool completely before frosting

*** Carrot cake uses Cream Cheese Frosting. Recipe under 'Frosting' labels.

Kek Pisang

This is one of my favourite recipes and it is very easy to make ^_^ Taste really good too..... !!!!

Bahan-bahan:

  • 90 g mentega
  • 90 g gula halus
  • 1 biji telur
  • 2 biji pisang restali, di lecek
  • 1 sudu teh esen vanilla
  • 1 sudu makan susu cair
Disatukan dan diayak:
  • 120 g tepung gandum
  • 1/2 sudu teh baking powder
  • 1/2 sudu teh baking soda
Cara-caranya:
  1. Griskan acuan segi-empat sama berukuran 19 cm dan alaskan dengan kertas minyak bergris.
  2. Putar mentega dan gula halus hingga ringan dan gebu. Masukkan telur dan pukul lagi. Campurkan pisang lecek, susu dan esen vanilla. Gaul lagi. Kemudian masukkan bahan yang telah di ayak dan gaul rata.
  3. Bakar di dalam oven yang sudah dipanaskan pada 175 C selama 35 - 40 minit.

Chocolate Buttermilk Cupcakes

Ingredients

A - Dry ingredients (sift together)

  • 2 cups flour
  • 1 1/2 cups sugar
  • 3/4 cups cocoa powder (Hershey's or Vochelle)
  • 2 tsps bicarbonate of soda or baking soda
  • 1 tsp salt
B - Wet ingredients (mix together in a bowl)
  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup Mazola oil
  • 1 cup boiling water
  • 2 tsps vanilla extracts
Preparations
  1. Preheat oven to 150 C
  2. Pour the wet ingredients onto the dry ones
  3. Mix at medium-high speed until all ingredients are blended and smooth
  4. Fill baking cups 2/3 full with batter
  5. Bake 25 - 30 minutes
  6. Cool completely before frosting
