Nana's Hokkien Noodles

Another favourite Kylie's recipes of mine. I made this all the time. This is my version of Kylie's Mum's Hokkien Noodle and Kylie's Hokkien Noodle.

Ingredients:

  • fresh Hokkien noodle or yellow egg noodle
  • ginger, roughly chopped
  • garlic, roughly chopped
  • bawang besar or bawang bombay, halved and cut into wedges
  • chicken breast fillets, thickly sliced on the diagonal
  • Maggi chicken stock granules
  • oyster sauce
  • kecap manis ABC
  • black pepper
  • carrots, julienned
  • braised dried chinese mushroom
  • sayur sawi
  • spring onions or daun bawang
  • a dash of minyak bijan
  • oil for stir-frying
Methods:
  1. Blanch noodle in boiling water for a few minutes. Drain and set aside
  2. Heat oil in wok, stir-fry chicken fillets until cook. Remove from wok and set aside.
  3. Add sesame oil, ginger, garlic, onion, stir-fry for 1 minute.
  4. Add carrots, mushrooms, sawi, chicken, chicken stock, oyster sauce, kicap manis, salt and pepper. Stir-fry for a further 30 seconds.
  5. Add noodles and spring onions. Stir-fry for another few minutes until all ingredients are mixed well.
  6. Serve immediately.
