Another favourite Kylie's recipes of mine. I made this all the time. This is my version of Kylie's Mum's Hokkien Noodle and Kylie's Hokkien Noodle.
Ingredients:
- fresh Hokkien noodle or yellow egg noodle
- ginger, roughly chopped
- garlic, roughly chopped
- bawang besar or bawang bombay, halved and cut into wedges
- chicken breast fillets, thickly sliced on the diagonal
- Maggi chicken stock granules
- oyster sauce
- kecap manis ABC
- black pepper
- carrots, julienned
- braised dried chinese mushroom
- sayur sawi
- spring onions or daun bawang
- a dash of minyak bijan
- oil for stir-frying
- Blanch noodle in boiling water for a few minutes. Drain and set aside
- Heat oil in wok, stir-fry chicken fillets until cook. Remove from wok and set aside.
- Add sesame oil, ginger, garlic, onion, stir-fry for 1 minute.
- Add carrots, mushrooms, sawi, chicken, chicken stock, oyster sauce, kicap manis, salt and pepper. Stir-fry for a further 30 seconds.
- Add noodles and spring onions. Stir-fry for another few minutes until all ingredients are mixed well.
- Serve immediately.
